Easy Peasy Soup!

Two KG schools opted to celebrate the season of Winter by making bowls of soup, served with crusty bread, followed by popcorn ... a warm and healthy way to beat the winter chills!

Method:
Cook chopped onion and a crushed garlic clove in a little olive oil until soft
Dice 2 potatoes and add to the pot with 3 cups of chicken stock
Cover and bring to the boil
Reduce heat and simmer for 10 minutes until potato is tender
Add 500g of frozen peas, boil the mixture for 5 minutes
Cool and puree with a hand blender
Garnish with parsley
